Diacetone-L-sorbose (DAS) is an intermediate product in the synthesis of ascorbic acid. DAS is obtained by acetonating L-sorbose in the presence of a catalyst. Possible catalysts are oleum, zinc chloride, copper sulfate, sulfonic acids, and ion exchange resins.
