可由动物、鱼类和甲壳类的肌肉或内脏，用温水提取而得；或由某些曲霉等丝状菌(Aspergillus melleus、Asp.niger、Asp.oryzae、Asp.saitoi、Asp. sojae、Monascus pilosus、Monascuspurpureus、Mucor circinelloides、Mucor iavanicus、Mucor miehei、mucor rouxii、Penicillium citrium、P.duponti、Rhizomucor miehei、Rhizopus chinensis、Rhizopus delemar、Rhizopus niveus、Rhizopusoryzae)、担子菌(Pycnoporus coccineus)、放线菌(Streptomyces)、细菌(Bacillus amyloliquefacieus、B.coagulans J 4、B.1entus、B.1icheniformis、B.polymixa、B.Stearothermophilus、B.subtilis、B.thermoproteolyticus、PseudoTt~onas paucimobilis)及酵母(Saccharomyces)的培养液，用室温以下的水提取、除菌并浓缩后，再在室温以下用树脂精制而得；也可将培养液用低温乙醇、含水乙醇及丙酮处理而得，或用硫酸铵分离后再经脱盐处理而得。商品中可含有食用级稀释剂、载体、稳定剂和防腐剂。
