将10g油酸溶于100mL 95%的乙醇中，然后用浓度为0.5mol/L的氢氧化钠乙醇溶液滴定，以酚酞为指示剂。到达等当点后，滤出析出的油酸钠皂。若不析出沉淀，也可蒸出乙醇和水后，得到粗产品，可用乙醇-乙醚混合溶剂重结晶。
