叶绿素铜钠盐制备

预处理后的竹叶原料→萃取→过滤→皂化→真空浓缩→分离→调酸→铜化→抽滤→成盐→干燥→成品

由于天然叶绿素稳定性差，对光和热敏感、不耐酸碱，不适合作为食品着色剂。按上述工艺，将叶绿素在碱性条件下皂化，用铜离子取代其分子中的镁离子，进而中和成盐，所得产品在室内散射光照和小于100ºC受热条件下，具有良好的耐热性，色素半衰期为40天。
