Abstract
Infrared spectroscopy and x-ray powder diffraction indicate enantiopure 1, 2-bisdecanoyl-3- palmitoyl-sn-glycerol (E-TAG) and by analogy 1-palmitoyl-2, 3-bisdecanoyl-sn-glycerol (E′- TAG) are β′-tending. In contrast, binary phase diagrams demonstrate that their mixtures form a thermodynamically stable β-form racemic compound and metastable β′-form conglomerates.
