Abstract

Summary Waxy corn starch was exhaustively hydrolyzed with enzymes and the fermentable sugars removed by fermentation. 2. A disaccharide, apparently the anomalous unit, was isolated from the unf ermentable residue in the form of three crystalline derivatives. 3. The three derivatives were shown to be interconvertible.
